Tasty paleo chicken!

This a delicious chicken dish that takes very little prep and is done in under an hour!

Ingredients are as follows:

  • 4 chicken thighs
  • 3 cloves of garlic
  • splash of olive oil
  • tbsp of butter
  • can of tomatoes
  • 400ml water
  • bay leaf
  • tbsp curry powder
  • tbsp tumeric
  • handful of fresh parsely
  • handful of fresh chives
  • tsp cumin
  • tsp coriander
  • sprinkles of pepper and sea salt to taste
  • Fresh coriander

How to:

  1. Clean and wash chicken
  2. saute garlic, oil and butter on stove top in cast iron pot
  3. add dry spices and mix with garlic etc for 2mins
  4. Add chicken and brown on either side
  5. Pour in water and tomatoes, mix well
  6. Bring to a simmer
  7. Cover and place in preheated 200°C oven for 50mins.
  8. Serve with fresh coriander, steamed veg, mashes and/or other paleo style dishes.
